3-4 Pork tenderloins

¼ C. Extra Virgin Olive Oil + 2 Tbls.

1lb. Cherrywood smoked bacon (chopped and cooked until crispy

3Tbls. Apple Cider Vinegar

6-7 Shallots (thinly sliced)

1 Qt. Apple Cider

2 Tsp. PureVanilla Extract

¼ C. Maple Syrup

¼ C. Chicken Stock

1 Bunch Parsley (Chopped)

Salt and Pepper

For the Sauce:

On medium high heat combine Cider, vanilla, syrup and chicken stock in a sauce pan and allow to simmer and not boil for about 1 hour or until reduced by half

For The Relish:

In a sauce pan over medium heat add 2 Tbls. Of Extra Virgin Olive Oil and add shallots

Allow to cook for about 20 minutes or until shallots are caramelized at which point you will add the bacon, and the vinegar

Allow to cook down until mixture has thickened and set to the side

For the Tenderloin:

Begin by oiling the tenderloins evenly and season generously with salt and pepper

Place on a medium to high heat grill and grill on each side for about 5 minutes each,until about medium well

Once tenderloin is cooked, remove from grill and allow to rest for another 5 minutes

Slice into ½ inch to 1 inch slices and fan across desired serving plate

Place relish on top of pork

And add the cider reduction and spoon across pork and and garnish with parsley
